Flank Steak Fix-Up

Flank Steak Fix-Up

RECIPE

This recipe requires 2-pound beef flank steak, scored. Scored has an asterisk next to it which corresponds to the following endnote: Cut lightly in a crisscross pattern - usually done by your meat retailer. Usually done by your meat retailer? Who else would score meat? The bread retailer? The candlestick retailer?

Today, we have fajitas to disguise the crappiness of that cut of beef. This has driven up the price of what was once the cheapest cut of beef.
